If you're starting out, the Sony A6700 or Canon R50 are solid picks - they both shoot great 4K, have decent autofocus for moving content, and won't drain your wallet like the pricier bodies. The R50 especially is forgiving if you're new to mirrorless since Canon's menu system isn't as confusing. Just remember you'll need to budget for lenses too, which is where costs add up fast - a basic kit lens gets the job done while you figure out what you actually need.
I've shot plenty of content on the road and learned pretty quick that the camera bodies everyone's talking about are honestly similar enough that what matters more is the lens situation and your workflow. The ones mentioned are good, but here's something worth considering: battery life gets real important when you're doing longer sessions. The Sony A6700 and Canon R50 both drain batteries faster than you'd expect during extended recording, especially in heat. If you're planning multi-hour shooting days, factor in spare batteries and a charger that doesn't require a wall outlet.
One thing that doesn't get enough attention is the autofocus behavior during video.
