French onion soup recipe with melted cheese topping

I'm trying to remake French onion soup like they serve it in those little Parisian restaurants, you know, the one with melted cheese on top. I'm wondering what cheese to use exactly and how long you're actually supposed to let the onions simmer for it to turn out right.

Don't use cheap shredded cheese that'll turn rubbery - get gruyère or emmental slices instead, they melt way better. For the onions, don't skimp on time - at least 45 minutes on low heat, stirring regularly until they're nice and golden and almost caramelized, that's where all the flavor comes from.
