With a young dog like that, you really need patience and consistent training from the start - retrieval training works best with dummy work, starting with short distances and then gradually increasing them so he understands he's supposed to follow you and can't just take off. It's also important that you keep calling him back and rewarding him so the recall becomes reliable before you head out into actual terrain. A lot of people make the mistake of letting their dog run free too early - keep him on the leash at first and only let him off when you're sure he listens to you. With a German Shorthaired Pointer, you've got a good hunting dog, but they can be pretty independent sometimes, so you need a steady hand and regular training for that.
How old is your short-haired dog exactly? 🐕 The most important thing really is that you train impulse control before you start serious retrieving work - so sit, down, and especially that he comes to you on whistle no matter how exciting things get around him. Starting with dummies is absolutely the right call, but a lot of people underestimate how important it is to train your dog in distracting environments too (not just in the garden), otherwise you'll get some nasty surprises out hunting later. I'd also recommend training him regularly with other dogs so he learns that he needs to stick with you even around other dogs and doesn't wander off 💪
