Most of those bottles use thermochromic pigments - organic compounds that change color when their molecular structure shifts with temperature changes, then shift back when it cools down. It's basically the same chemistry as mood rings and those heat-sensitive mugs, just suspended in the bottle's coating or the material itself.

The pigments themselves are usually made from leuco dyes - basically colorless compounds that have a color-producing component locked away. When temperature changes, the polymer matrix around them loosens or tightens, and that triggers a chemical state shift. The dye flips between colored and colorless forms without actually breaking down, which is why it's reversible.

What's worth noting though is that not all color-changing bottles use the same mechanism. Some rely on liquid crystals instead, which work through a different principle - the crystals physically alter how they reflect light as temperature shifts, rather than the dye molecule itself changing structure. Liquid crystal ones tend to show more dramatic, sharper color transitions compared to the leuco dye versions, which can look a bit more gradual or muted. The durability differs too; leuco dyes fade over time and with repeated cycling, while liquid crystals can last longer if the encapsulation is done right.

I've played around with thermochromic stuff in various craft projects, and the thing people don't always realize is that the color change only works within a pretty narrow temperature range - usually somewhere between room temp and maybe 50-60°C - so if your water gets too hot or the bottle too cold, you'll lose the effect entirely or it stops responding as dramatically.
