Aquafaba can replace egg whites to create a foam, but for a sponge cake it's more complicated because the egg yolk brings a lot to the structure and emulsion. You can try with just whipped aquafaba, but you're going to lose some of the richness and the crumb might be less airy than a real sponge cake. Honestly, for an eggless cake that gives good results, you're better off looking for a recipe designed for that rather than adapting a classic sponge cake.
