Ugh, quinoa on its own is kinda dry, honestly! What works for me is mixing it with a good dressing while it's still warm, that way it absorbs the flavors so much better. I throw in a good amount of lemon, olive oil, a touch of garlic, and then I add things that give it some life like corn, avocado, cherry tomato, red onion and some seeds or nuts. The key is not being shy with the dressing and combining textures and colors because that way even if it's nutritious it looks appetizing and you know it's gonna be delicious!
