How do you make brownies that don't dry out in the middle?

I've been trying this several times and they always come out either too raw or completely dry. I use the chocolate recipe I saw on TikTok a few months ago but something's not working right. Is there any trick to make them come out moist?

When I make brownies at home, the same thing always happens to me: either I leave them in too long and they come out like a brick, or I'm afraid to let them cook longer and they turn out undercooked. The key is not to rely 100% on the oven time, but instead to stick a toothpick in the center about two minutes before the recipe says - if it comes out with some chocolate crumbs stuck to it (not completely clean), that's the sweet spot. Another important detail is taking the brownie out of the oven while the surface still looks a little wet, because it keeps cooking from the residual heat while it cools down, and that gives you that fudgy, gooey center you're after. Oh, and make sure your chocolate is good quality and use butter instead of oil if the recipe allows - it makes quite a difference to the final texture.

The trick is not to overdo it in the oven; brownies keep cooking after you take them out from the residual heat, so it's better if they look a little wet in the center when you pull them out. The amount of butter and chocolate you use also matters a lot - if you skimp on those ingredients they dry out much more easily. Another thing that helps is covering the pan with aluminum foil in the last few minutes if you see the surface is browning too much, that way the inside has more time to cook without the top burning. And if you really can't get it right, try adding an extra egg or a bit more butter to the batter; that definitely makes a difference in the final texture.
