The easiest way to attach the elastic is to fold the fabric in half with the right sides facing inward, stitch the side seams, then turn it right side out and insert the elastic into the casing (the folded edge) - that way it won't fall apart when you wash it. I'd recommend using elastic tape about 1-1.5 cm wide, it's more comfortable and won't dig into your ears. If you want the mask to last longer, choose a thick cotton fabric or fold it in two or three layers, and you can always just replace the elastic over time.
I'd recommend skipping the casings and sewing the elastic straps directly to the fabric edges using bias tape (you can buy it ready-made or cut it from the same fabric) - that way the attachment lasts way longer and looks much neater! Make sure the elastic is good quality and doesn't lose its stretch after washing, because that's usually where things go wrong. Pro tip: before you sew on the bias tape, pull the elastic tight so the mask already sits on your face with the right tension, then secure it - that way it won't slip when you're wearing it and won't start pinching.
