There's nothing wrong with not following her right away; Instagram isn't a binding commitment and people exchange contacts all the time without any interaction happening afterward. If you're not sure whether you want to keep in touch, waiting is totally fine - it's not impolite, it's just being honest with yourself instead of doing an automatic follow with no real intention behind it. If something comes up later or you feel like interacting, you can follow her no problem; if not, there's no need to do something that doesn't represent you just to follow a social rule that doesn't actually exist.
