The problem is simply this: 1000+ episodes is a massive time commitment, and whether it's worth it depends on how much you're willing to invest in a really long story. One Piece still has good moments and the story keeps going, but there's also a lot of filler and sometimes pacing issues that drag things down. If you were a fan before, the nostalgia and character development might appeal to you - but realistically, you need to be prepared to spend months on it.

Honestly, I'd say: if you really don't feel like committing to that kind of marathon, there are plenty of other good anime out there that tell their story in a reasonable timeframe and aren't any less quality. But if you specifically want to get back into the series, you could consider being selective about it - watch certain arcs instead of grinding through everything. Some fans deliberately skip the slower parts and do better that way. It's not ideal, but it's more realistic for people who don't have 200+ hours to spare.

In the end: just try it? Watch a handful of new episodes and see if it hooks you. If it does, go for it. If you notice it starts feeling like a chore, then spend that time on something else that grabs you more instead.

I wouldn't just start over from episode 1, but rather grab a recap video or manga summary for the old arcs and then jump in at a more recent point - that way you'll save yourself hundreds of hours and still be able to follow the current story, which most people say is really good. Whether it's worth it really depends on whether you liked the series back then and if you're willing to stick with it for a while, but honestly I wouldn't put you through catching up on hundreds of episodes.
