No hassle with yeast or kefir, even though some people fall for that myth. I've made them a few times and I can see that simple batter turns out way better than when people start experimenting.

The main thing is not to overcomplicate the batter and fry it in a good skillet with a thick bottom. One time I tried some recipe from the internet with baking soda and like half-sweet batter, the result was just meh. Standard simple batter - that's what works.
