I put roller blinds in my kitchen and they're really convenient - just wipe them with a damp cloth once a month and that's it. Aluminum is also a good option, though it looks kind of cold in the interior to me, but that's a matter of taste. The main thing is get ones with moisture-resistant coating, otherwise they degrade quickly from cooking.
For the kitchen I'd recommend roller or vertical blinds - they're easier to clean from grease and moisture than horizontal ones. If you want something that looks nicer, then roller blinds with moisture-resistant material would be the perfect option.
I've been fishing for like fifteen years now, so I know moisture pretty well) I agree with the previous answer about roller blinds - practical and unpretentious. but personally I'd also look at aluminum blinds if your kitchen design allows it, because they're honestly the easiest to wash and they'll last for years without any problems. just make sure to keep in mind that there'll be temperature fluctuations and humidity in the kitchen, so avoid cheap materials that warp from moisture
