I put roller blinds in my kitchen and they're really convenient - just wipe them with a damp cloth once a month and that's it. Aluminum is also a good option, though it looks kind of cold in the interior to me, but that's a matter of taste. The main thing is get ones with moisture-resistant coating, otherwise they degrade quickly from cooking.
For the kitchen I'd recommend roller or vertical blinds - they're easier to clean from grease and moisture than horizontal ones. If you want something that looks nicer, then roller blinds with moisture-resistant material would be the perfect option.
Roller blinds are definitely the most practical option for a kitchen, but I'd also pay attention to the material - fabric with a Teflon coating repels grease and moisture way better than regular fabric.
A tip from experience: if you're going with blinds that are harder to clean, install them higher up on the window or to the side of the window, not right above the sink or stove - and you'll have fewer problems. Plus keep in mind that wooden blinds in a kitchen are a headache; they'll swell up and warp.
