Why does my arugula wilt so quickly and how do I store it properly?
I buy arugula at the supermarket and after two days it's already brown and mushy. It really annoys me because I can only use a third of it. Is there a trick to keep it fresh longer?

Two days isn't actually that bad for arugula, but yeah, if it starts turning brown, you're doing something wrong with storage. It's a leafy green and needs less moisture than most people think. Most people just keep it in the packaging or in the crisper drawer, and that's where the moisture builds up - that's exactly the problem. Arugula rots from the inside out, even if it still looks okay on the outside.
The key thing: take it out of the plastic packaging as soon as you get home. Put it in a clear container or box with paper towels on the bottom and top? The paper towels absorb the excess moisture. Then stick it in the fridge, but not in that humid crisper drawer - more like the top shelf where it's a bit drier. Some people also put paper towels between the leaves if there's a bigger bunch. That way it'll easily last a week or even longer without falling apart. And before eating - if there's still a little moisture on it - just dab it dry quickly in a strainer.
