Why does my homemade oat milk separate so much compared to store bought?

I've been making oat milk at home for about 6 months now to save money, but it always separates into this weird watery layer at the bottom after like 2 days in the fridge. The store-bought brands stay way more consistent. Am I doing something wrong or do they add stabilizers that I'm not using?

You're right about the stabilizers - store brands use gums like guar gum or xanthan gum to keep everything suspended, whereas homemade versions separate naturally because there's nothing holding the particles together. If you want yours to last longer without separation, blend in a tiny pinch of xanthan gum (like 1/8 teaspoon per quart) or even a dab of lecithin, both cheap and available online.
