The key is not to cook the chicken until it's completely done, take it out a little before it reaches that point. I do it in a hot pan with oil over medium-high heat, like 6-7 minutes per side max if it's breast cut into fillets, and then I let it rest for 2-3 minutes before cutting. Another important thing is that you use good quality chicken and don't reheat it once it's already in the salad, better to put everything together cold and add the chicken fresh from the pan so the heat is still there but gradually fades away. Trust me it comes out juicy that way, not like that TikTok disaster haha.
Ugh, I totally get it because it's happened to me too 😅 what works best is marinating the chicken beforehand in something acidic like lemon or vinegar, that really keeps it juicy. I also cut it into not-too-big pieces and cook it in a really hot pan but quick, like 5-6 minutes max, and then let it rest for 2 minutes off the heat before putting it in the salad while it's still warm. The trick is also using breast but not too thick, honestly thigh is better because it's harder to dry out.
