My Liebherr fridge (about 3 years old) has been making this humming and clicking sound for a couple of weeks now, especially at night when it's quiet. It was never this loud before. Could that be a defect or is that completely normal?

The humming is basically normal - that's the compressor running to keep things cool. But if the noise has only been this loud for a couple of weeks and wasn't like that before, that points more toward a problem. With a 3-year-old unit, the compressor can start to wear down, or the mounting might have come loose. The fans can also start rattling if they're not sitting right anymore.
The clicking noise, though - that's something different. It could be coming from the thermostat if the contact is wearing out, or from the solenoid valve for the ice maker (if your fridge has one). If both noises are happening together and this is new, I'd get a technician to look at it. It's probably still under warranty or at least a pretty cheap fix either way. I wouldn't just ignore it, because stuff like that usually doesn't get better on its own.
