Sodium hypochlorite (bleach) works by oxidizing bacterial structures, damaging their cell membranes and DNA. Basically the active chlorine breaks down the molecules that keep the bacteria functioning and kills it in the process. That's why it's so effective as a disinfectant, but also why you shouldn't mix it with other products - the chemical reaction can get dangerous.
