How long does couscous salad keep in a lunchbox?

I make myself a big couscous salad with veggies and feta every Monday for the whole week to take to the office. The problem is it gets mushy at some point or the dressing starts smelling off. How do you guys store something like that so it doesn't go bad after just three days?

Couscous keeps fine in the fridge for 4-5 days, but the trick is storing the dressing separately - I always pack a little container with oil, lemon juice, and spices that I only pour over right before eating, otherwise the couscous gets really mushy. Cut the veggies a bit chunkier and add the wetter stuff like tomatoes or cucumber later when you open your lunchbox. Feta holds up fine too, but make sure your container is really airtight - if your dressing smells off, there was probably air getting in.

The vegetables are your real problem, not the couscous - especially tomatoes and cucumbers release water and turn everything mushy. I'd recommend storing the raw vegetables completely separately in a second container and only adding them when you eat, along with the dressing. If you really want to prep everything together, go for harder stuff like carrots, bell peppers, or red cabbage - those hold up much longer without falling apart. I'd also take out the feta and only add it when you eat - otherwise it gets salty and rubbery.
