Freeze the soup after it cools completely, otherwise the temperature change will mess up your freezer! Use plastic containers with space at the top (soup expands when it freezes) or freezer bags, which take up way less space in the freezer. Most soups keep well for three or four months in the freezer, and thawing is simple - pop it in the fridge the night before or heat it straight on the stove if you're in a rush.
