Spring and autumn - that's what you need if you want to avoid tourist crowds and extreme heat. In spring (May) it's already warm enough for the sea, and in autumn (September-October) the water's heated up, there are fewer people than in summer, and it's more comfortable during the day. Summer's great if you don't mind heat over 30 degrees and you're ready to pay twice as much for everything - hotels, food, tours.
