Easy miso soup with vegetables for the week?

SA sanchez1980 ES 🛠️ Specialist 👁 70 ⚑ Report Soups

I've been trying to make healthier soups to take to work in a container, but I'm always bored with the same old thing. I saw that miso soup is trendy right now and wanted to try making it at home, but I have no idea how to do it without burning the miso or ending up with something weird.

What vegetables would you want to put in - stuff you already have at home or are you open to trying others? The thing with miso is actually super easy, nothing to worry about burning: you boil water with whatever vegetables you want (carrots, broccoli, mushrooms, whatever), and right before serving you dissolve a tablespoon of miso paste in a bit of hot broth in a separate cup, making sure it doesn't touch direct heat, and then you pour it into the pot. Just don't boil it again after you've mixed it in because you'll ruin the flavor and the probiotics. Works perfectly for taking in a container to eat the next day, though some days it might taste a bit stronger but nothing bad!
