How do I keep my watercolor paintings from getting muddy?

I've been painting landscapes for about a year now, and I keep running into this issue where my colors start looking gray and lifeless once I add more than a few layers. I'm using decent Winsor & Newton paints and Saunders Waterford paper, so I don't think it's the materials. What techniques am I missing to keep things looking fresh and vibrant?
