In winter, orchids need much less water - basically only water them when the substrate is completely dry, maybe once a week or even less, depending on how humid your home is. The important thing is not to let them get waterlogged because with the cold and moisture you risk root rot. Use room-temperature water, not cold, and if you can avoid wetting the flowers directly.

One thing people don't really think about is the temperature of the water itself - if you use cold water straight from the tap, the thermal shock can seriously stress the roots when they're already slowed down by the cold. It's better to let it sit at room temperature for at least a few hours before using it, so you avoid giving the plant another headache when it's already dormant.
