It depends a lot on what you're gonna use the PC for. If it's just work, browsing and some documents, 256GB is fine, but it gets tight pretty quick if you're into video editing, RAW photos or have a bunch of games installed like those heavy AAA games nowadays. My recommendation is to go for 512GB if you can afford it, because the value for money is way better and you won't have that constant anxiety of deleting stuff to free up space - I myself have 1TB on my work laptop and I don't regret it.
256GB is way too tight for most cases, it's not just for people working with video. Windows already takes up like 30-40GB, then you install a couple of bigger games and things get messy fast - you end up having to constantly delete stuff, which wears out the SSD. What's your actual usage like? Because if it's just browsing and actual work, maybe it'll work, but honestly I'd recommend going for 512GB minimum if you can afford it, the price difference isn't that much and you'll sleep better at night.
