Miso and tofu soup: easy recipe for a quick dinner?

ciclista91 IT 🔍 Enthusiast 👁 75 ⚑ Report Soups

I saw a miso soup on TikTok yesterday and got the urge to try making it, but I'm not really sure how to do it without messing it up. I have tofu from Carrefour and red miso, but I'm wondering if I should cook everything together or if there are steps I shouldn't skip so I don't ruin it.

the trick is not to boil the miso directly in hot water because it loses its probiotics and the flavor becomes flat. heat the water, add some dashi or vegetable broth if you have it, then take it off the heat and dissolve the miso in it (about a tablespoon per person), stir well. cut the tofu into cubes and add it afterward together with whatever you want (seaweed, scallions, mushrooms) without cooking it, just let it sit for a few minutes off the heat so it warms up. the Carrefour tofu works fine, no problem, there's nothing complicated about it.

Don't add the miso straight into boiling water, yeah, but the real problem is something else: you gotta cut the tofu into cubes and add it only at the end, when the water's already lukewarm, or it'll fall apart completely. Heat the water, dissolve the miso in a cup with some lukewarm water (that way you avoid lumps), then pour it into the pot, add the tofu, some seaweed if you have it, and let it sit on the heat for like a minute without letting it boil. Carrefour tofu works fine, maybe just dab it with paper towels before cutting it so it's not too wet and holds up better while cooking.

What nobody mentions is that supermarket tofu already has a ton of water in it, so if you squeeze it quickly before adding it the soup won't turn into mush. Heat the broth, dissolve the miso in a separate cup with some lukewarm water (that way you won't get lumps), then pour everything together, add the tofu in chunks and you're done - two minutes and you're eating. The thing is not to let anything boil after you've added the miso, otherwise you'll lose all the flavor.
