I know a lot of people fish year-round, but honestly the best times in Wallonia are spring (April-May) and fall (September-October) when the water isn't too warm and there's good insect activity. Summer is usually a pain because the rivers drop and the water gets too hot, so the trout become really difficult. Winter is possible too but you gotta stick with it, there's fewer people on the water and conditions are often annoying. If I were you I'd start with May-June to learn with new gear, you'll have a better shot at success and it's already pretty decent.

Trout are way more active in spring and fall, when the water is cool but not freezing! In Wallonia, you'll have your best chances between April and June, then again in September-October. Summer can be tricky because the water warms up and trout get lazy, and in winter it's often too cold and the rivers can be swollen. You can always try year-round, but you'll honestly waste a lot less time if you target those periods!
