honestly, there aren't quite as many as it feels like - but i get the frustration. windows 11 bundles updates sometimes, so it just seems like something new is coming all the time. some updates are actually important (security holes, bugs that slow your pc down), others are more like... well, minor tweaks that microsoft just wants to roll out.
you can't really choose which windows updates to install and which to skip, that's the annoying part. but what you can do: in windows settings under "system > advanced options" you can set it so your pc doesn't just shut down on its own. there you'll find "active hours" - set those to times when you're not at your computer anyway. then windows can install the updates during that time without catching you off guard. alternatively you can disable the automatic restart time completely and restart yourself when it works for you. it's not ideal for security but at least it's plannable.
another option: if your pc is getting a big feature update (doesn't happen every month) you can delay it by going to "update options > show all options" and setting the delay. smaller security updates will still run, but you get the big annoying restarts later. but i wouldn't completely disable everything - had a friend who did that and after like half a year he got ransomware because a known security hole wasn't patched. so: yeah, most of them are necessary, but you can at least control when the restart happens.
